This is the same blend of apples and apple brandy that we have always used for this fortified cider style which originated in Normandy on the Northwest Coast of France. The brandy is more nuanced each year as we use a solera style of aging (meaning brandy from the previous years is left in the barrel while new brandy is added for aging) as such the brandy in this batch is between 1 & 3 years old. The apples definitely expressed themselves a little differently this year so give it a try. 46 cases made
