Our most unique and ambitious creation... a mead made from wild yeast that we have captured and cultivated right at the Meadworks! The process of cultivating wild yeast is time-consuming and delicate, but the rewards are a mead that tastes unlike anything available.The flavor reflects the delicate process of creation. It has an initial smooth and slightly sweet honey flavor. At 13% ABV there is a hint of alcohol to compliment and enhance the honey flavor which gives way to an amazing array of fruity and floral essences imparted by the yeasts alone. We have used a more subtle oak for Feral, to provide a light contrast to the smooth honey.

Helderberg Meadworks is a family owned and operated craft meadery in upstate NY. We are one of a precious few wineries in the state who only produce mead. Owner and meadmaker Peter Voelker has been making a variety of meads for many years. In 2010 he decided to open the meadery with his wife Kirsten to share what many consider the best mead in the country. While many of you have no doubt seen and tasted the commonly available meads, very few have tasted mead like ours. Customers often describe it as "Old World" mead reminiscent of their ancestral family recipes from Europe.
