Tula 2021 / 750ml / 9.45% ABV
Harvested from 25 year old vines of Boyden Valley, one of the earliest established vineyards in VT.
We were delighted to share in the harvest of 2021 as David Keck and Stella14 Wines took over management of the vineyard. A short 2 week maceration established the baseline for this wine which then aged for 1 year in an egg shaped flex tank of which allows the full flavors of the fruit-microbe matrix to come through. This low alcohol red wine is well balanced and smooth with a delicate floral-fruit flavor and grounded energy. The word Tula has multi-cultural origins with a common meaning: leaping water, tranquility, a mountain peak; in Sanskrit, Tula implies balance - a fitting salute to this delicious wine!
Petite Pearl 2020 / 10.3% / 750ml
A sparkling rosé to light red wine with robust acidity made from the juice of Petite Pearl grapes. ½ the grapes were pressed immediately from harvest and the other ½ were macerated at cold temps, but warm enough to maintain a steady fermentation for 5 weeks. Both wines aged in neutral oak barrels for one year, then were blended and bottled with a tirage of juice from 2021. Low in alcohol, sessionable, crisp and refreshingly tart.
Nostos 2019/ 11.2% abv/ 750 ml
Still red wine made from the juice of Frontenac Noir harvested from Penny Hill Vineyard in Danville, VT. Aged for 1 year in neutral oak barrels. Rich and velvety with refreshing acidity.
Fable Farm & Fermentory is a farm-based winery producing aged wines and vinegars. We work with local flora, microorganisms, and the overall Ecology to co-create the character of our living wines. We produce wine primarily from apples, pears, grapes, honey, tree saps, and the blending thereof, while sometimes incorporating other small fruits and herbs that we glean and grow in the verdant foothills of central Vermont.
