When wine is made by a combination of honey and grapes, it is referred to as a pyment. Pyment has its roots in ancient Greece and Rome, a time when experimental recipes were becoming more popular.
In Greek mythology, Bacchus was originally known as the god of mead before becoming the god of wine. Our sweet pyment pays tribute to both grapes and honey!
We produce mead from Texas wildflower honey and specific varietal honey. Our meads range from dry to sweet. We produce traditional meads, melomels with fruit, bochets using caramelized honey, and metheglins that include herbs and spices.
