While not waterless, it was the first "Endless" mead we ever designed, with the goal of maximizing the flavors of the ingredients.
Complex layers of four different forms of vanilla from the honey, barrel, oak, and beans, woven through each other.
So this season of Meadowfoam Honey we got straight from an Oregon farmer is off the charts complex and makes me wonder about all the previous batches of honey we’ve gotten from other sources that weren’t as direct.
Not only is the honey a vanilla marshmallow explosion but it has so many additional layers. There’s fruity notes, there’s a little clove, and I swear I get some “menthol” on the back end, which only appears when it’s extra pure meadowfoam.
After it’s time in the barrel, and on the vanilla beans, this mead is intense with flavor, there is so much packed in there that I STRONGLY recommend only drinking it at 55 degrees or even room temperature. Do not drink this one cold!
Pro Tip: If you don’t have a wine fridge for the perfect 55 degrees, either put the bottle in the fridge for 20 mins before serving (set a timer!) or store it in the fridge and take it out an hour before serving.
