After getting samples of nearly a dozen types from Willamette Valley we chose Kotata for our first Endless Blackberry mead!
Kotata's family tree involves wild blackberries, red raspberries, and loganberries. The Kotatas came out of the Oregon State breeding program. It was developed in the 1950s as part of a project to find a berry with improved flavor over the Marionberry!
They have an amazing balance of sweet and tart, huge flavor, and are the same berries used in Endless Dark Ritual.
This mead also used the same award winning honey from the Little Econlockhatchee River that was used in Endless Dark Ritual (and the new Soliloquy) from J&P Apiary!
It’s big! It’s inky! All that jamminess you loved in Endless Dark Ritual was from these blackberries, and this time there’s even more blackberry flavor! This mead also features an extended maceration with the fruit to increase color, flavor, and the tannin structure.
The big jammy sweetness upfront is followed by beautiful grippy tannins, like a big Napa Cab, that dry out your mouth, refreshing it for the next sip. Over the next year those tannins are going to evolve into beautiful velvet and silk.
All of our bottled meads improve with age, but this one and Endless Dark Ritual are going to really evolve as short chain tannins link up and form longer chains. If you were to ever stash away a few bottles in the cellar, these are the two, you will be very happy you did.
