Foraged Chokecherries and Local Montmorency Cherries combined with raw honey were fermented to make this tart aromatic wine. Slightly sweet and tannic, this reminds us of summer days and homemade jams
Notes
Cherries, raw honey, and spring water were fermented on the skins for several weeks and then pressed. Fermentation continued on Hungarian oak for six months before the finished product was bottled.
