Dagger is a tart, unfiltered botanical mead begins with fir needles hand-harvested from organically grown trees, making opening a bottle as fragrant as a winter walk in the woods.
St. Crimson introduces itself with a wink and a smile before revealing a deep complexity that keeps you coming back for more. Made from pressed black currants and New York State honey, St. Crimson is wild-fermented for a full year in oak barrels with no added water. Delightfully drinkable, this tart and juicy off-dry mead can be enjoyed alone, or as the base of a Negroni or spritz cocktail.
Raise the Roof is a spontaneous co-fermentation of wild yeast, lactic bacteria, apple blossom honey and artisanal well water. After laying on the lees for over year, this sour sparkling mead is naturally bottle conditioned in the ancestral method. Unfiltered and without added sulfites. Produced in 2018, Bottled in 2019 and released late 2020. For a magical evening. Very limited edition—like no other! Aged to perfection.
Jewels into flowers, made exclusively from New York State wildflower honey and water is infused with chrysanthemum and chamomile flowers. Its a delectable dry mead with a beautiful aroma. Hand silkscreened in a 500ml bottle. This is a limited edition mead sure to delight!

Enlightenment Wines has been focusing on small batch natural unfiltered meads made with wild yeast, foraged herbs, and locally sourced fruits since 2009. Our mead are dry, around 12-13% alcohol, barrel fermented and released seasonally. We have two production locations, one on a family farmstead in the Hudson Valley and the other in Brooklyn New York.
